Put everything you’ve learned to the test! Teams must tackle a variety of survival stations—from fire and shelter to water, food, and navigation—while working together to "survive" the scenario. Guided and safe, but full of adventure and surprises.
Herbology
Herbology is a class focused on the study of plants and their traditional uses for food, wellness, and daily life. Learn about how herbs have supported human health and traditions for centuries!
The Malignated Dandelion
Did you know that the yellow-headed flowers you see all over your yard are actually beneficial? Learn about one of the most misunderstood plants around–the Dandelion! Dandelion greens are most of the most nutritionally dense greens, and every part of the plant can be utilized. We’ll chat about the plant and how to best use it!
Plant Walk and Talk
Walk with Luann as she identifies and discusses the benefits and uses of plants, and which things to stay away from.
Fermenting Veggies
Learn about the art and science of fermenting vegetables. You will learn the basics of safe fermentations, preparation methods, and common vegetables. A jar of fermented vegetables will be included in the class.

Your 2026 Instructors
LuAnn Raadt is an experienced gardener, herbalist, and educator. Growing up on a farm in southern Minnesota, she developed a love for plants and their cultivation. Interestingly, she now embraces many of the “weeds” her family once sought to remove, using them in remedies for common health issues. Trained under professional herbalists, she delights in identifying plants, learning their botanical characteristics, and cultivating a diverse range of medicinal herbs that are not readily available commercially or are considered at-risk in the wild. LuAnn also enjoys crafting herbal remedies, teas, and other beverages, and is enthusiastic about introducing others to the fascinating world of folk herbalism and teaching them how to create and use herbal products themselves.
Elsa Litecky is an ex-field biologist turned outdoor educator, and founder of EcoElsa. The project began as a blog and Youtube channel in 2018 to share topics and skills with people to help make the outdoors more accessible to more people, especially parents and teachers. While blogs and videos are still produced, they've since broadened their scope to include curriculums and teaching resources, as well as offering outdoor programs, presentations, and workshops. Elsa enjoys teaching the next generation all about the wilderness and how we can interact with it.
